Tasty Tuesdays Caramel Cracker Bars

These really are TO DIE FOR! I made them for the 1st time a few weeks ago for a family reunion and they were a huge hit!

Caramel Cracker Bars
2 cup graham cracker crumbs
1 cup brown sugar
1 cup granulated sugar
1 cup butter
½ cup milk
1 box Ritz crackers (about 80 crackers)
1 cup butterscotch morsels
1 cup semi-sweet morsels
¾ cup peanut butter (I almost think I would omit this next time, I am not really a PB & chocolate fan as the rest of the world seems to be)
  • In saucepan, heat graham cracker crumbs, sugars, butter and milk. Bring to a boil and continue stirring while boiling for 5 minutes. Remove from heat.
  • In foil lined (and buttered) 13x9 baking dish, layer Ritz crackers over bottom. Pour half of caramel mixture over Ritz, then lay another layer of Ritz over caramel mixture, and remaining caramel. Repeat with one more layer of Ritz crackers. Refrigerate while continuing with next step in recipe.
  • In small saucepan, melt butterscotch and semi sweet morsels with peanut butter. Stir until smooth and creamy. Pour over Ritz crackers, refrigerate 4 hours or over night.
  • Cut into bite size pieces and enjoy cold!

HELP...Again :)

Tasty Tuesdays Orange Chocolate Chip Shortbread Cookies

I was at my cousins last week while she was trying to find a dessert recipe for her dinner party that night. She came upon this recipe and it was SO yummy and SO easy to make!

  • 1 cup icing sugar

  • 1 tablespoon grated orange peel

  • 1 3/4 cups flour

  • 1/4 cup cornstarch

  • 3/4 cup semi-sweet mini chocolate chips (we used regular size and it was fine)


  • Pre-heat oven to 325 degrees
    Sift or stir flour & cornstarch together - set aside
    In a large bowl, beat icing sugar & butter until light & fluffy
    Add orange peel & blend well
    Stir in flour mixture - mix well
    Stir in chocolate chips
    Divide dough into 4 equal parts & shape each part into a smooth round ball
    On ungreased cookie sheets, press or roll each ball of dough into a 6" circle 1/4" thick
    With a long knife, score each circle into 8 wedges.
    Leave in place on cookie sheet & prick each wedge about 3 times with a fork
    Bake for about 20 mins til the edges are very lightly browned
    Cool on cookie sheets 5 mins
    Prick again & cut into wedges
    Place on wire racks to cool completely

    Melt 1/2 cup chocolate chips with 1 tsp oil in microwave, dip edges.
