Base
1 1/2 cup flour
2/3 cup firmly packed brown sugar
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup margarine/butter
1 tsp vanilla
2 egg yolks
3 cups mini marshmallows
Topping
2/3 cup corn syrup
1/4 cup margarine/butter
2 tsp vanilla
1 (10 oz) package peanut butter chips
2 cups rice krispies
2 cups salted peanuts
- Heat oven to 350. In large bowl, combine all base ingredients except marshmallows at low speed until crumbly. Press firmly in greased 13x9 pan.
- Bake for 12-15 minutes or until golden brown. Remove from oven and immediately sprinkle with marshmallows. Return to oven, bake 1-2 minutes or until marshmallows just begin to puff. Cool.
- In large saucepan, combine all topping ingredients except cereal & peanuts. Heat just until chips are melted and mixture is smooth, stirring constantly. Remove from heat, stir in cereal & peanuts. Immediately spoon warm topping over marshmallows. Spread to cover. Refrigerate 45 minutes or until firm. Cut into bars.
Because I forgot to take a picture of my squares all nice on the platter, I had to take a picture of the bowl of "scraps" (ends) They still look yummy :) |
