Update

Sooooo....all my blood work was perfect. At my last appointment I mentioned to the Dr. something called "norepinephrine deficiency." I had never heard of this disorder before but after reading an amazing note on Facebook posted by an amazing girlfriend of mine (which can be read HERE) I was convinced that I was suffering from this. He told me it is "not something you hear much of" (UGH) and quickly dismissed it. Today he changed his tune. He asked me tons of questions related to this disorder (I am guessing he Googled it after my last visit haha). He basically said it sounds like this is what I have (read Jenn's note
for a description of it!) but couldn't really diagnose it as there is no "real" testing for it. He started me on Wellbutrin which should A) boost my energy B) curb my appetite and C) make me a happier me :)
The rest of my afternoon was spent getting new color, foils, haircut and then makeup shopping! My "sister-in-law" is a hairdresser (& an awesome one at that!!) and knows a lot about makeup and colors (which I suck at!) so she came with me at helped me pick out what I needed :) I bought $102 worth of makeup for $27! (Thanks to my wonderul Mother-In-Law and her wonderful birthday present to me back in July :)
So all in all I had a great day!
I am praying these meds work!! Looking forward to the blog post labeled "All Better" LOL

A Little Sunday Blog

I want to blog about how I have been feeling lately. For the past few months how every day seems to be a struggle. How I feel like I am failing at this thing called "life". I want to blog about this just so you know you are not alone and maybe even just for some encouragement. I am holding back right now. I don't want my blog to be a place where I come to release negative energy....but oh how good that would feel. Maybe instead of blogging about how terrible I feel, I will wait and blog about feeling better. Oh how I cannot wait to write THAT blog......

Tasty Tuesdays Apple Pie Dip & Cinnamon Sugar Pita Chips

Apple Pie Dip & Cinnamon-Sugar Tortilla Chips

Ingredients:
2 cups peeled, cored, and diced apple
2 tbsp fresh lemon/calamansi juice
3 tbsp brown sugar
¼ tsp cinnamon
1 tsp cornstarch dissolved in 1 tsp water

Chips
5 (6-inch) wheat tortillas
2 tablespoons butter, melted
1/2 teaspoon cinnamon
1 1/2 tablespoons sugar

Directions:
  • You can either cook this on the stove-top or the microwave.
  • Combine all the dip ingredients in a small pan/ microwaveable bowl except the cornstarch-water mixture.
  • Heat for a few minutes until it’s boiling and has extracted juice from the apple.
  • Add cornstarch-water mixture to the “sauce”
  • Put back in the microwave/stove top until boiling and the sauce has thickened.
  • Set aside. You can serve this warm or chilled. It doesn’t matter. It will taste delicious.
  • Cut tortillas into desired size. {wedges}
  • Put in a slightly greased baking pan.
  • Brush the tortillas with butter.
  • Sprinkle with cinnamon and sugar, and bake at 210ยบ C until golden brown, about 5-8 minutes.
  • Let them cool...and then dip away :)

Happy Canadian Thanksgiving!

Today (in no particular order) I am thankful for:

My Family
I don't know where to start on this topic. I love being such a "close knit" family. I love my extended family, my "step" family" and my immediate family. I am SO thankful Grampy is still with us to celebrate today after many "touch and go" days in the hospital last month.

My Parents
Now that I am raising 3 kids of my own...all I have to say is "thank-you." If my 3 boys can turn out as good as my sister, brother & I have, than I owe it to you guys. Thank you for instilling in me the morals that you did, even if at the time I was not grateful. Thank you for being "mean"...for setting rules and teaching me boundaries. (again...at the time I could not have been LESS grateful ;) I love you guys!

My Kids
Some days I am counting down the minutes until bedtime but all it takes is an "I love you Mama" to brighten my day. I have such well behaved boys (for the most part and I am so proud of them :)

My Husband
I don't know what I would do without this man. Such a kind, hard-working, funny, loving, selfless man. I am so thankful God gave me him. I love you baby <3

Health
So thankful for not only my health but that of my boys :)

A Roof
...over our heads :) Even though it is not the "roof" I want over my head forever...it is a home.

I am thankful for so much this Thanksgiving...too much to write about in 1 blog post :)
